There are endless ways of doing this. Here's one that I've found has worked for me. It should be great for barbecue season, and certainly better than vegeburgers.
Serves 3, takes about 30 minutes (not including salsa).
About an hour before starting, slice the aubergine in half, and place both halves face-down on a plateful of salt. This will draw out a lot of the nasty sour juices, making it more palatable. You might also like to make the salsa at this point, if you don't already have it ready.
Chop the courgette into "cubes". Chop the aubergine similarly. Chop the pepper into squares. Wash the mushrooms and use them whole. Load everything into wooden skewers, kebab style. Put them under a hot grill, turning occasionally, until the aubergines are getting pretty black on all sides.
Heat up the tortillas. Lay a tortilla flat on a plate, empty two of the skewers onto it, and add salsa and cream to taste. Fold the tortilla, and eat.
