I never liked salsa dips. Until one day I tried some vegetable fajitas at a pub, and got curious. Anyway, this food-processor recipie is quick (about 15 minutes), and tastes much better than commercial salsas - at least when you eat it cold on tortilla chips. I've also used this in my own vegetable fajitas recipie.
Get out your food processor. Coarsely chop the onion, and parboil it, so that the onion is still firm and has a little bite, but isn't so stridently powerful. Strain the onions, and put them in the processor bowl.
Strain the tomatoes with a sieve, discarding the excess juice. Add the solids to the bowl.
Chop the garlic and ginger, and add.
Add everything else, and whizz it up until you reach the desired consistency. It should be a little chunky.
